Course description
This course will focus on the chemistry, biology, taste and nutritional value of Australian native foods. We will explore the potential opportunity for different foods in Australia's market place, and discuss the issues around bringing a new food to the market, in the context of culture, biopiracy, intellectual property and the preservation and conservation of plant genetic resources.
